Jason, great review, however you oversteeped the tea quite badly. The tea should be steeped for no longer than 1 min, however you steeped it for 2 minutes and 30 seconds, this is why you missed the sweetness and tasted more of the bitterness and astringency as is the case with oversteeping many black teas.
Thanks for the input Tony. I’m sure many will appreciate your steeping guidelines. I do try to steep Yunnan blacks in a similar manner, rather than follow each purveyor’s unique instructions. I feel this provides a better base for comparison. It is my goal to place teas on a level playing field and draw out the strengths and weaknesses of each tea. For example, many fine teas can have an initial, bitter taste that gives way to a cooling or sweet aftertaste that extends for some time after the tea is swallowed. It is not the bitterness per say, but the transition of that bitterness into something else.
